I want to paint over wallpaper in a bathroom. What is the best method of applying texture so the wallpaper seams won't show?

I would caution you NOT try to cover over wallpaper in your bathroom at all. In order to fully cover the seams of wallpaper – and therefore prevent water from getting under the paper and curling the edges – you would have to sand, then skim-coat with plaster. Typically, this is not a do-it-yourself project because plastering is an art. To get a good result you would have pay anywhere from $500-1,000 to have a professional skim-coat an average 6x9-foot bathroom.

It would be easier and cheaper to remove the wallpaper altogether (or, again, have a professional do this for you at a much lower cost than paying for a professional plaster job) than to try to cover over it. You would then simply have to patch any small holes and sand the entire wall after removing the wallpaper to prepare the surface for paint. You’ll now have a clean slate to create any contemporary look you want!
